Ingredients
- 1 box (approx. 15-18 oz) gluten-free vanilla or yellow cake mix (plus ingredients required by the box)
- 1 container (16 oz) gluten-free vanilla frosting
- 1 pint fresh blueberries
- 1 pint fresh strawberries
- Powdered sugar for dusting (optional)
Instructions
- Prepare and bake the gluten-free cake mix in a 9×13 inch pan as directed on the packaging.
- Let the cake cool completely to room temperature before frosting.
- Rinse the blueberries and strawberries, then pat them completely dry with paper towels to prevent liquid from running.
- Slice the strawberries into halves or thin vertical slices.
- Microwave the frosting for 10-15 seconds to soften it, then spread a thick, even layer over the top of the cake.
- Arrange the blueberries in the top-left corner in rows to represent the stars.
- Place the strawberry slices in horizontal rows across the cake to create stripes, leaving white frosting visible in between.
- Chill for 10-15 minutes if the frosting is too soft, then dust with powdered sugar if desired before serving.
Notes
To save time on the day of your event, you can bake the cake a day in advance and store it at room temperature. If you find your strawberries are very juicy, consider placing them on the cake just before serving to keep the white frosting looking crisp and clean.
