Ingredients

  • 3 cups chopped fresh or well-drained canned peaches
  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peach extract
  • 1/2 cup powdered sugar
  • 2 tablespoons milk


Instructions

  1. Prep the pans. Preheat your oven to 350°F (175°C) and grease two loaf pans with cooking spray or butter and a light dusting of flour.
  2. Mix dry ingredients. In a large mixing bowl, whisk together the flour, white sugar, brown sugar, salt, baking soda, cinnamon, cloves, and nutmeg until well combined.
  3. Combine wet ingredients. Add the vegetable oil and eggs to the dry mixture, stirring until just incorporated, then stir in the vanilla and peach extracts.
  4. Fold in peaches. Gently fold the chopped peaches into the batter until evenly distributed without overmixing.
  5. Bake the loaves. Pour the batter into the prepared pans and bake for 50 to 60 minutes, or until a tester inserted into the center comes out clean.
  6. Cool and glaze. Allow the bread to cool in the pans for 15 minutes before transferring to a wire rack, then whisk the powdered sugar and milk together to drizzle over the cooled loaves.
