Description

These delightful cupcakes feature a soft buttermilk base with a hidden center of sweet peach preserves. Topped with a tangy cream cheese frosting, fresh diced peaches, and a golden honey drizzle, they offer a perfect blend of summer fruit and floral sweetness.


Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup peach preserves
  • 4 oz cream cheese, softened
  • 1.5 cups powdered sugar
  • 1 tbsp milk
  • 1 cup fresh peaches, diced small
  • 2 tbsp honey
  • 1 tsp sugar crystals


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Add the eggs one at a time, beating thoroughly after each addition, then stir in the vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients; mix until just combined.
  6. Fill each cupcake liner halfway with batter, add a dollop of peach preserves to the center, and top with more batter until three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean, then cool on a wire rack.
  8. Prepare the frosting by beating the softened cream cheese, powdered sugar, and milk until the mixture is smooth and creamy.
  9. Spread the frosting over the cooled cupcakes and garnish with diced fresh peaches, a drizzle of honey, and a sprinkle of sugar crystals.

Notes

To ensure a perfectly smooth frosting, make sure your cream cheese is completely softened to room temperature before mixing. If fresh peaches are unavailable, you can use well-drained canned peaches for the topping, though fresh fruit provides the best texture and flavor contrast against the honey.
