Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
- In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
- Add the eggs one at a time, beating thoroughly after each addition, then stir in the vanilla extract.
- Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients; mix until just combined.
- Fill each cupcake liner halfway with batter, add a dollop of peach preserves to the center, and top with more batter until three-quarters full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean, then cool on a wire rack.
- Prepare the frosting by beating the softened cream cheese, powdered sugar, and milk until the mixture is smooth and creamy.
- Spread the frosting over the cooled cupcakes and garnish with diced fresh peaches, a drizzle of honey, and a sprinkle of sugar crystals.
