Ingredients
- 6 large eggs, room temperature
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon almond extract
- 4 fresh mangoes
Instructions
- Prep and whip. Preheat your oven to 350°F and whip the eggs and sugar on high speed for eight minutes until thick, pale, and ribbon-like.
- Fold dry ingredients. Whisk the flour and baking powder together, then gently fold the dry mixture into the eggs in three separate batches.
- Bake the sponges. Divide the batter between two prepared nine-inch pans and bake for twenty-five minutes until golden and springy.
- Prepare the frosting. Whip the cream cheese, butter, powdered sugar, and almond extract until fluffy and smooth.
- Assemble the cake. Layer the sponges with mango purée and frosting, stacking them carefully before coating the exterior.
