Description

Elevate your classic carrot cake with this luxurious version featuring grated marzipan for a moist, almond-infused crumb. Finished with a billowy cream cheese frosting and charming handmade carrot toppers, this spice-laden dessert is the perfect centerpiece for any gathering.


Ingredients

  • 1 cup softened butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 200g marzipan, grated
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/2 tsp salt
  • 2 cups finely grated carrots
  • 1/2 cup raisins
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla sugar
  • 1 tsp grated lemon zest
  • 1/2 cup heavy cream
  • Toasted coconut flakes for garnish


Instructions

  1. Prepare oven and pan. Heat oven to 180°C and grease a 25 cm springform pan with butter and parchment paper.
  2. Cream base ingredients. Beat butter, sugars, and grated marzipan until smooth before incorporating eggs and sour cream.
  3. Combine dry ingredients. Sift flour, baking powder, and spices into the batter, then gently fold in carrots and raisins.
  4. Bake the cake. Pour batter into the pan and bake for one hour or until a skewer comes out clean.
  5. Prepare the frosting. Beat softened butter with powdered sugar, vanilla sugar, and lemon zest until creamy.
  6. Whip in cheese. Gradually mix in cream cheese and heavy cream until the frosting is light and fluffy.
  7. Shape carrot decorations. Roll small pieces of marzipan into carrot shapes, using a knife to score lines and adding mint sprigs for tops.
  8. Assemble and decorate. Frost the cooled cake and top with toasted coconut and your custom marzipan carrots.
