Ingredients
- 1 cup softened butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 200g marzipan, grated
- 3 large eggs
- 1/2 cup sour cream
- 2 cups all-purpose flour

- 1 tsp ground cinnamon

- 1 cup cream cheese, softened

- 1 tsp grated lemon zest
- 1/2 cup heavy cream
- Toasted coconut flakes for garnish
Instructions
- Prepare oven and pan. Heat oven to 180°C and grease a 25 cm springform pan with butter and parchment paper.
- Cream base ingredients. Beat butter, sugars, and grated marzipan until smooth before incorporating eggs and sour cream.
- Combine dry ingredients. Sift flour, baking powder, and spices into the batter, then gently fold in carrots and raisins.
- Bake the cake. Pour batter into the pan and bake for one hour or until a skewer comes out clean.
- Prepare the frosting. Beat softened butter with powdered sugar, vanilla sugar, and lemon zest until creamy.
- Whip in cheese. Gradually mix in cream cheese and heavy cream until the frosting is light and fluffy.
- Shape carrot decorations. Roll small pieces of marzipan into carrot shapes, using a knife to score lines and adding mint sprigs for tops.
