Ingredients

  • 4 cups sliced peaches (fresh, or canned and drained)
  • 2 cups granulated sugar, divided
  • 1/2 cup water (only if using fresh peaches)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of nutmeg or almond extract
  • Ground cinnamon for sprinkling


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, combine peach slices, 1 cup of sugar, and 1/2 cup of water (if using fresh fruit). Bring to a boil and simmer for 10 minutes.
  3. In a large mixing bowl, whisk together the remaining 1 cup of sugar, all-purpose flour, baking powder, and salt.
  4. Slowly stir in the whole milk until the batter is smooth, then mix in the melted butter and vanilla extract.
  5. Pour the batter into the bottom of a 9-by-13-inch baking dish. Do not stir.
  6. Carefully spoon the hot peaches and their syrup over the batter. Do not stir, as the batter will rise through the fruit during baking.
  7. Sprinkle the top with ground cinnamon and bake for 40 to 45 minutes until the crust is golden brown and bubbly.

Notes

To achieve the perfect texture, ensure the fruit mixture is still hot when added to the baking dish, which helps activate the rising agents in the batter. If you prefer a more tart dessert, you can reduce the sugar in the fruit syrup by a quarter cup or add a squeeze of fresh lemon juice.
