Description

This classic Old-Fashioned Peach Cake features a tender, golden batter that rises beautifully around a sweet, spiced peach filling. It is a simple, comforting dessert made with pantry staples that brings a touch of homemade nostalgia to any gathering.

Ingredients

  • 6 tablespoons unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 3/4 cup whole milk
  • 2 cans (15 oz each) sliced peaches in syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon zest
  • 1/2 cup heavy cream

Instructions

  1. Preheat and melt. Preheat oven to 375°F. Place butter in a 9×11 inch dish and heat until melted.
  2. Prepare the batter. In a bowl, whisk flour, baking powder, 1 cup sugar, and salt. Stir in milk until just combined.
  3. Layer the batter. Pour batter into the prepared dish over the melted butter. Do not stir.
  4. Simmer the peaches. In a saucepan, combine peaches with remaining sugars, spices, and lemon zest. Simmer for 10-15 minutes until thickened.
  5. Arrange the fruit. Ladle the warm peach mixture evenly over the batter layer. Do not stir.
  6. Bake the cake. Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
  7. Prepare the caramel. Melt remaining butter, sugar, and cream in a pan for 5 minutes until smooth, then drizzle over the cake.

Notes

  • Ensure your baking powder is fresh to guarantee the cake rises properly over the heavy fruit.
  • Simmer the peach syrup until it reaches a jam-like consistency to prevent a soggy bottom crust.
  • Let the cake rest for at least 20 minutes after baking to allow the juices to settle and firm up.
  • Avoid opening the oven door during the first 35 minutes to prevent the delicate batter from collapsing.
