Ingredients

  • 3 cups cake flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 1 cup 2% milk
  • 1 teaspoon almond extract
  • 6 large egg whites
  • 2 cups frozen strawberries
  • 2 cups frozen blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 teaspoons vanilla extract
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • Fresh berries for garnish


Instructions

  1. In a saucepan, cook berries, sugar, and water until dissolved, bring to a boil, then stir in vanilla and a cornstarch slurry to thicken.
  2. Remove from heat, stir in butter, let cool, and fold in additional berries; repeat for both fruit types and refrigerate.
  3. Beat egg whites to stiff peaks in a stand mixer and set aside in the refrigerator.
  4. Cream softened butter for two minutes, then beat in granulated sugar until fluffy.
  5. Whisk together cake flour, salt, and baking powder in a separate bowl.
  6. Alternately add the flour mixture and the milk mixed with almond extract to the creamed butter.
  7. Gently fold the chilled egg whites into the batter until just combined.
  8. Divide batter into three greased 8-inch pans and bake at 350°F for 20 minutes.
  9. Cool cakes in pans for 10 minutes before moving to wire racks to cool completely.
  10. Whip heavy cream and powdered sugar in a chilled bowl until stiff peaks form.
  11. Layer the cakes with whipped cream and fruit fillings, frost the exterior, and garnish with fresh berries.

Notes

For the cleanest slices, ensure the cake is thoroughly chilled for at least two hours before serving. If you find the whipped cream is too soft, you can stabilize it with a tablespoon of instant vanilla pudding mix. Store any leftovers in an airtight container in the refrigerator to keep the fruit fillings fresh and the cake moist.
