Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 1/4 cups granulated sugar, divided
- 32 oz cream cheese, softened
- 2 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 325°F (163°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, stir together graham cracker crumbs, melted butter, and 1/4 cup sugar until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes, then let it cool slightly.
- In a large bowl, beat the softened cream cheese until perfectly smooth, then gradually add 1 cup of sugar and the vanilla extract.
- Add eggs one at a time, mixing just until combined, then gently fold in the sour cream until the batter is uniform.
- Pour the filling over the cooled crust and bake for 30-35 minutes until the center is set but still has a gentle jiggle.
- Allow the pan to cool to room temperature before refrigerating for at least 2 hours to set completely.
- Before serving, arrange the sliced strawberries and blueberries on top, then lift from the pan and slice into bars.
Notes
To ensure a perfectly smooth filling, let your cream cheese reach full room temperature before mixing to prevent tiny lumps. For clean, sharp edges when serving, dip your knife in hot water and wipe it dry between each individual cut.
