Description
This refreshing no-bake dessert layers light ladyfingers soaked in a homemade peach syrup with a velvety almond-scented mascarpone cream. It is the perfect bright and fruity alternative to classic coffee tiramisu for any summer gathering.
Ingredients
- 4-5 fresh peaches, sliced
- 1/2 cup water
- 3/4 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 16 ounces mascarpone cheese, room temperature
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 package (7 ounces) Savoiardi ladyfingers
Instructions
- In a medium saucepan, combine the sliced peaches, water, and 1/4 cup of sugar; bring the mixture to a boil, then lower heat and simmer for 15 minutes.
- Let the syrup steep for 15 minutes, then strain through a fine-mesh sieve into a shallow bowl; chill both the syrup and the peach solids until completely cold.
- In a chilled bowl, whip the heavy cream until it forms stiff peaks, then set it aside in a separate container.
- Using a mixer, beat the room-temperature mascarpone cheese with the remaining sugar, a portion of the peach syrup, vanilla, and almond extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture in two batches until the filling is light and airy.
- Quickly dip each ladyfinger into the chilled peach syrup for one second per side and arrange them in a single layer in the bottom of a rectangular dish.
- Spread half of the mascarpone filling over the ladyfingers, then repeat with a second layer of dipped cookies and the remaining cream.
- Cover the dish and refrigerate for at least 6 hours, or ideally overnight, to allow the ladyfingers to soften and the flavors to meld.
Notes
To get a cleaner slice when serving, dip your knife in warm water and wipe it clean between every cut. If you want to make this ahead of time, it stays fresh in the refrigerator for up to three days, though the ladyfingers will continue to soften slightly each day.
