Instructions
- Preheat your oven to 350 degrees F (175 degrees C) and grease an 8×8-inch baking dish with cooking spray.
- In a small bowl, combine the melted butter, brown sugar, and cinnamon, then spread the mixture evenly over the bottom of the prepared pan.
- Arrange the peach slices in a single layer over the brown sugar mixture.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy; add the egg and vanilla and beat until well combined.
- Alternately add the flour mixture and milk to the wet ingredients, mixing on low speed until the batter is just smooth.
- Carefully spread the batter over the peach layer and bake for 40-45 minutes until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for exactly five minutes, then loosen the edges and invert the cake onto a serving plate.
