Ingredients

  • 2 cups peaches, peeled and sliced into wedges
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk


Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease an 8×8-inch baking dish with cooking spray.
  2. In a small bowl, combine the melted butter, brown sugar, and cinnamon, then spread the mixture evenly over the bottom of the prepared pan.
  3. Arrange the peach slices in a single layer over the brown sugar mixture.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy; add the egg and vanilla and beat until well combined.
  6. Alternately add the flour mixture and milk to the wet ingredients, mixing on low speed until the batter is just smooth.
  7. Carefully spread the batter over the peach layer and bake for 40-45 minutes until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for exactly five minutes, then loosen the edges and invert the cake onto a serving plate.

Notes

To ensure the most tender texture, make sure your butter, egg, and milk are all at room temperature before you begin mixing the batter. If using frozen peaches, do not thaw them completely before baking to prevent the topping from becoming too watery.
