Description

This simple, one-bowl coffee cake features a tender sour cream crumb layered with a deep, spiced brown sugar and pecan filling. Topped with a buttery, crunchy streusel, it is the perfect uncomplicated treat for any morning gathering.

Ingredients

  • Melted butter
  • Granulated sugar
  • Salt
  • Dark brown sugar
  • Cinnamon
  • All-purpose flour
  • Chopped pecans
  • Sour cream
  • Eggs
  • Vanilla extract
  • Baking powder
  • Baking soda

Instructions

  1. Prep the pan. Preheat the oven to 350°F and grease a 9-inch round baking pan, lining the base with parchment paper.
  2. Prepare the streusel. Whisk together melted butter, granulated sugar, salt, a portion of the brown sugar, cinnamon, flour, and half the pecans until crumbly.
  3. Mix the filling. Stir together the remaining brown sugar, pecans, and cinnamon in a small bowl until well combined.
  4. Create the batter. Whisk granulated sugar, sour cream, eggs, melted butter, and vanilla until smooth; gently incorporate the flour, baking powder, baking soda, and salt.
  5. Assemble the base. Spread a portion of the batter into the prepared pan and top evenly with the spiced pecan filling.
  6. Finish the assembly. Dollop the remaining batter over the filling, smooth the top, and sprinkle generously with the pecan streusel.
  7. Bake the cake. Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean, shielding with foil if the top browns too quickly.
  8. Cool and serve. Rest in the pan for 10 minutes before inverting onto a rack to cool completely, then finish with a dusting of powdered sugar.

Notes

  • Use room temperature dairy and eggs to ensure the batter emulsifies properly for a tender crumb.
  • Always measure flour by spooning it into the cup and leveling with a knife rather than scooping directly from the bag.
  • Stop mixing the batter as soon as the last streaks of flour disappear to keep the cake light and soft.
  • Let your melted butter cool slightly before mixing to avoid curdling the sour cream or scrambling the eggs.
  • If your streusel feels soft, place it in the refrigerator while preparing the batter to ensure it stays crunchy during the bake.
