Enjoy the crispy, golden taste of the autumn fair right at home with these easy-to-make, spiced pumpkin funnel cakes. They require no special equipment and utilize simple pantry staples for a warm, comforting seasonal treat.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1 teaspoon pumpkin spice
- 2 teaspoons baking powder
- 1/2 cup milk
- 1/4 cup pumpkin spice creamer
- 1/2 cup pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- Vegetable oil for frying
Instructions
- Prepare dry mixture. In a large mixing bowl, combine the flour, salt, cinnamon, allspice, pumpkin spice, and baking powder, whisking until the spices are evenly distributed.
- Whisk wet ingredients. In a second bowl, combine the milk, pumpkin spice creamer, pumpkin puree, eggs, vanilla extract, and brown sugar, whisking until the mixture is smooth and the sugar is dissolved.
- Mix the batter. Slowly add the dry ingredients to the wet mixture using a hand mixer on low speed until smooth and free of large lumps.
- Heat frying oil. Pour vegetable oil into a heavy-bottomed pan over medium-low heat until it reaches a temperature where a drop of batter sizzles and floats.
- Pipe the batter. Transfer the batter into a large plastic storage bag, seal tightly, and snip a small corner off the bag to prepare for pouring.
- Fry until golden. Squeeze the batter into the hot oil in a circular and crisscross motion, frying for about three minutes on the first side before flipping to cook for another two minutes.
- Drain and cool. Remove the cake from the oil and place on paper towels to absorb excess grease before serving warm.
Notes
- Use a deep-frying thermometer if possible to keep oil steady at 350 degrees Fahrenheit.
- Avoid over-mixing the batter to ensure the final texture remains light rather than chewy.
- Make sure the hole in your plastic bag is roughly half an inch wide for the best flow.
- Fry only one funnel cake at a time to keep the oil temperature consistent.
- Ensure you cross over your batter paths during pouring to create an interconnected structure.
