This decadent pumpkin spice layer cake features a tender, velvety crumb infused with warm autumnal spices and finished with a rich, tangy cinnamon cream cheese frosting. Perfect for any celebration, this reliable recipe ensures a soft, bakery-quality result using simple pantry staples.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon pumpkin spice blend
  • 1 cup pure canned pumpkin puree
  • 1 cup buttermilk
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons heavy cream

Instructions

  1. Prep the oven. Preheat the oven to 275°F and grease and flour three round nine-inch cake pans.
  2. Whisk dry ingredients. In a large bowl, combine the flour, baking soda, and salt until uniform.
  3. Cream butter and sugar. Beat the softened butter with white and brown sugars in a separate bowl until pale and fluffy.
  4. Incorporate liquids. Beat in the eggs one at a time, then mix in the vanilla extract and pumpkin spice.
  5. Build the batter. Alternate adding the dry flour mixture and buttermilk to the butter base, mixing until just incorporated.
  6. Add pumpkin and bake. Fold in the pumpkin puree, divide the batter into prepared pans, and bake for 30 to 35 minutes.
  7. Cool the layers. Allow the cakes to rest in the pans for 10 minutes before transferring to a wire rack to cool completely.
  8. Mix the frosting. Beat the cream cheese, butter, heavy cream, powdered sugar, and cinnamon until smooth and spreadable.
  9. Assemble the cake. Layer the cooled cakes with frosting between each level and cover the exterior with the remaining icing.

Notes

  • Ensure all dairy ingredients are at room temperature for at least two hours to prevent lumpy frosting.
  • Use a spoon to measure your flour instead of dipping the cup into the bag to keep the cake light.
  • Chill the assembled cake for one hour before slicing to ensure the layers hold their shape perfectly.
  • Only use pure canned pumpkin rather than pie filling to maintain the intended spice balance.
