Ingredients
- 1 package white cake mixture
- 3 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 cup sweetened shredded coconut
- 2/3 cup chopped toasted pecans (for batter)
- 1 cup chopped toasted pecans (for frosting)
- 1-2 tablespoons rum (optional)
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease three cake pans with shortening or baking spray.
- In a large mixing bowl, beat the white cake mixture, eggs, buttermilk, and vegetable oil on medium speed for two minutes until smooth.
- Gently fold the shredded coconut and 2/3 cup of toasted pecans into the batter using a spatula.
- Divide the batter evenly between the three prepared pans and bake for 15 to 17 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes in their pans for 10 minutes before transferring them to wire racks to cool completely, brushing the tops with rum if desired.
- Prepare the frosting by beating the softened cream cheese and butter until smooth, then gradually add powdered sugar and vanilla before stirring in the remaining toasted pecans.
- Stack the cooled cake layers with frosting in between, then frost the top and sides and refrigerate for at least two hours before serving.
Notes
To ensure the most stable frosting, make sure your cream cheese and butter are softened to room temperature but not melting. If your kitchen is very warm, you may want to chill the frosting for 15 minutes before assembling the layers to prevent sliding.
