Description

This funfetti cookie cake is super chewy, buttery, and oh so festive! No mixer required; easily whip up this fun birthday cookie cake in under an hour. Serve it with or without the vanilla buttercream frosting – it is wonderful both ways!


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 1/4 cup all-purpose flour
  • 1/2 cup white chocolate chips (plus more for topping)
  • 1/4 cup rainbow sprinkles (plus more for topping)
  • Vanilla Buttercream Frosting (optional):
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 2 1/2 cups powdered sugar
  • 2-3 tablespoons milk


Instructions

  1. Preheat. Preheat oven to 350ºF and grease an 11-inch cookie cake pan.
  2. Melt. Warm 1/2 cup unsalted butter until just melted.
  3. Combine. In a large mixing bowl, stir melted butter with brown sugar and granulated sugar until combined.
  4. Wet Ingredients. Stir in the egg, vanilla extract, baking powder, and salt.
  5. Dry Ingredients. Mix in cornstarch and all-purpose flour, then fold in white chocolate chips and rainbow sprinkles.
  6. Press. Press the dough into an even layer in the prepared pan and top with extra sprinkles and chips.
  7. Bake. Bake for 16 to 18 minutes until edges are slightly golden brown, then cool completely.
  8. Frosting. Beat softened butter, vanilla, and salt until smooth. Slowly add powdered sugar and milk, then beat on high until creamy and pipeable.
  9. Decorate. Pipe a border along the edges of the cooled cake and top with extra sprinkles.

Notes

  • Cookie Cake Pan: If you do not have an 11-inch pan, use a 9×13-inch metal pan and reduce the baking time slightly.
  • Sprinkle Choice: Use rainbow jimmies instead of nonpareils to prevent the colors from bleeding into the dough.
  • Chewiness Secret: Do not overbake; the cookie cake will continue to firm up as it cools in the pan.
  • White Chocolate Quality: High-quality white chocolate chips will melt beautifully and offer a much better flavor than generic brands.
