Description

Strawberry Heaven is a light and refreshing layered dessert featuring fluffy angel food cake, a silky cream cheese filling, and a vibrant homemade strawberry glaze. Perfect for potlucks or summer gatherings, this simple treat is best prepared in advance to let the flavors meld together beautifully.

Ingredients

  • 1 store-bought angel food cake, torn into 1-inch pieces
  • 1 quart fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 12 oz whipped topping, thawed
  • 1 (3 oz) package strawberry gelatin powder
  • 3 tablespoons cornstarch
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup water

Instructions

  1. In a small saucepan, whisk together 1/2 cup sugar, cornstarch, strawberry gelatin powder, lemon juice, and water.
  2. Cook over medium heat, stirring constantly, until the mixture reaches a boil and becomes thick and clear, then remove from heat and cool completely.
  3. Gently fold the sliced strawberries into the cooled glaze until well coated.
  4. In a large bowl, combine the torn angel food cake pieces with 2 cups of the whipped topping, then press firmly into the bottom of a 9×13 inch glass baking dish.
  5. In a separate bowl, beat the softened cream cheese with the remaining 1/2 cup sugar and vanilla until smooth; fold in the remaining whipped topping and spread evenly over the cake layer.
  6. Pour the strawberry glaze mixture over the cream layer and refrigerate for 2 to 3 hours to allow the dessert to set and the flavors to develop.

Notes

For the smoothest middle layer, ensure your cream cheese is completely at room temperature before mixing to prevent lumps. This dessert actually improves after sitting for several hours, making it an excellent candidate for preparation the day before your event.
