Ingredients

  • 2 lbs fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1/2 cup neutral oil
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 tsp unflavored gelatin
  • 1 tbsp cold water
  • 2 cups heavy cream
  • 1/2 cup powdered sugar


Instructions

  1. Prep and preheat. Preheat your oven to 350°F and grease three 8-inch cake pans, lining the bottoms with parchment paper.
  2. Cream the base. Using an electric mixer, beat the softened butter, oil, and granulated sugar until the mixture is light and fluffy.
  3. Add the eggs. Incorporate the eggs one at a time, beating well after each, then stir in the vanilla extract.
  4. Mix dry ingredients. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Fold and combine. Alternately fold the dry ingredients and buttermilk into the butter mixture until just combined, being careful not to overmix.
  6. Bake the layers. Divide the batter into the prepared pans and bake for 24-26 minutes until a toothpick comes out clean, then cool completely.
  7. Macerate the berries. Toss the chopped strawberries with sugar and set aside to create a natural syrup.
  8. Stabilize the cream. Dissolve gelatin in water and microwave briefly, then whip into the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  9. Assemble the cake. Layer the cake rounds with frosting and berry filling, then frost the exterior and decorate with remaining berry halves.
