Description

This refreshing dessert features a moist white cake infused with vibrant, homemade strawberry-raspberry and blueberry sauces. Topped with a silky cream cheese whipped frosting and fresh fruit, it is the perfect colorful centerpiece for any summer gathering.


Ingredients

  • 1 box white cake mix plus ingredients required by package
  • 4 teaspoons unflavored gelatin divided
  • 4 tablespoons water divided
  • 2 cups fresh strawberries diced and divided
  • 1 cup fresh raspberries
  • 2 cups fresh blueberries divided
  • 4 tablespoons granulated sugar divided
  • 2 tablespoons fresh lemon juice divided
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar divided
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract


Instructions

  1. Bake the white cake in a 9×13-inch pan according to the package directions. While still warm, poke holes across the surface using the handle of a wooden spoon.
  2. In two separate small bowls, bloom 2 teaspoons of gelatin in 2 tablespoons of water each for several minutes.
  3. In a medium saucepan, simmer 1 cup of strawberries and 1 cup of raspberries with 2 tablespoons of sugar, 1 tablespoon of lemon juice, and a splash of water for 5-8 minutes.
  4. Mash the cooked red berries, stir in one bowl of bloomed gelatin until dissolved, then fold in the remaining diced strawberries.
  5. In another saucepan, simmer 1 cup of blueberries with 2 tablespoons of sugar, 1 tablespoon of lemon juice, and a splash of water until soft; mash the berries and stir in the second bowl of bloomed gelatin along with the remaining whole blueberries.
  6. Spoon the red and blue sauces into the cake holes, alternating colors, and refrigerate until the sauces are set.
  7. Beat the softened cream cheese with 1/2 cup of powdered sugar until smooth.
  8. In a separate chilled bowl, whip the heavy cream with vanilla and the remaining 1/2 cup of powdered sugar to firm peaks, then fold half of this into the cream cheese mixture.
  9. Spread the cream cheese topping over the cake and garnish with the remaining whipped cream and fresh berries before serving.

Notes

For the cleanest slices, ensure the cake is completely chilled for at least 4 hours so the gelatin-based berry sauces can set firmly inside the crumb. If you prefer a smoother texture for the topping, always use a block of full-fat cream cheese and ensure it is at room temperature before beating to avoid any lumps. You can prepare the berry sauces a day in advance to save time on the day of your event.
