Description

This refreshing, no-bake dessert uses layers of chilled watermelon, fresh berries, and stone fruit for a stunning and healthy centerpiece. It is the perfect cooling treat for hot summer afternoons that requires no oven or complicated equipment.


Ingredients

  • 1 whole seedless watermelon
  • 1 pint fresh blueberries
  • 1 pint fresh strawberries, hulled and sliced
  • 2 ripe white peaches, pitted and sliced
  • 1 green apple, sliced
  • 2 tablespoons fresh lemon juice


Instructions

  1. Prepare fruit components. Wash and dry all berries thoroughly, then slice peaches, strawberries, and apples into rounds; toss apple and peach slices in lemon juice to prevent browning.
  2. Trim melon rounds. Slice the watermelon into 1-inch thick rounds and use a circular mold or plate as a guide to trim away the rind, leaving perfect melon cylinders.
  3. Assemble the layers. Place the largest watermelon round on a platter, top with a layer of sliced fruit, and repeat the stacking process until the tower is complete.
  4. Secure the stack. If necessary, push wooden skewers vertically through the center of the cake to stabilize the layers and trim the excess so they are hidden.
  5. Garnish and serve. Decorate the top with remaining berries and fruit cutouts, then slice into thick wedges with a sharp knife to serve immediately.

Notes

  • Ensure the watermelon is fully dried with a paper towel before adding fruit to prevent the layers from sliding.
