Description

This refreshing, no-bake tropical fruit cake features layers of crisp, juicy watermelon and sweet pineapple, beautifully accented with fresh citrus and berries. It is the perfect, hydrating centerpiece for any sunny afternoon gathering or summer celebration.


Ingredients

  • 1 Large seedless watermelon
  • 1 Fresh pineapple
  • 3 Fresh maltas, peeled and segmented
  • 2 Kiwi fruits, peeled and sliced
  • 1 Cantaloupe, balled
  • 1 Cup fresh blueberries
  • 1 Cup red grapes, halved


Instructions

  1. Shape the melon. Slice both ends off the watermelon, stand upright, and remove the rind and white pith to create a cylinder, then slice into two three-inch thick rounds.
  2. Prepare pineapple crown. Remove the top and bottom of the pineapple, trim the outer skin and eyes, and slice into thick, circular rounds slightly smaller than the watermelon.
  3. Prep fruit toppings. Wash all fruits, slice the kiwi into wheels, separate the malta segments, and scoop the cantaloupe using a melon baller.
  4. Assemble cake tiers. Place the largest watermelon round on a platter, top with the second round, and finish by adding the pineapple slice to the center.
  5. Arrange fruit accents. Secure kiwi and cantaloupe to the cake using toothpicks, then decorate with malta segments, blueberries, and halved grapes to fill the gaps.
  6. Chill before serving. Refrigerate the cake for at least thirty minutes to firm up the structure before removing any exposed toothpick tips and serving.
