Instructions

  1. Caramelize the sugar. Cook white sugar and water in a saucepan over low heat for 12 to 15 minutes without stirring until a deep amber syrup forms.
  2. Prepare the pan. Pour the caramel into an eight-inch square baking pan and arrange fresh mango slices in a single, tight layer on top.
  3. Beat the butter. In a large bowl, beat room temperature unsalted butter with a heavy spoon for one minute until pale and creamy.
  4. Cream sugar and eggs. Add powdered sugar and beat until fluffy, then incorporate room temperature eggs one at a time, mixing well after each.
