Description

Create a colorful and festive treat with this Patriotic Poke Cake, featuring a swirled red, white, and blue interior soaked in creamy cheesecake pudding. Topped with a cloud of fresh whipped cream and festive sprinkles, it is the ultimate easy dessert for summer holiday celebrations.

Ingredients

  • 1 box white cake mix (plus eggs, oil, and water required by package)
  • 2 boxes (3.4 oz each) instant cheesecake pudding mix
  • 4 cups cold milk
  • Red food coloring
  • Blue food coloring
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • Red, white, and blue sprinkles

Instructions

  1. Preheat your oven according to the cake box directions and grease a 9×13-inch baking dish.
  2. Prepare the white cake batter in a large bowl exactly as the package instructs.
  3. Divide the batter evenly into three separate bowls; leave one white, tint the second bowl red, and the third bowl blue, stirring until the colors are bright.
  4. Drop spoonfuls of each colored batter randomly into the prepared baking dish and use a toothpick to gently swirl the colors together.
  5. Bake as directed on the box, then remove and let the cake cool for approximately 10 minutes.
  6. Use the handle of a wooden spoon to poke holes across the entire surface of the warm cake, then allow the cake to cool completely.
  7. In a medium bowl, whisk together the instant cheesecake pudding and cold milk until dissolved.
  8. Pour the pudding mixture evenly over the cooled cake, ensuring it fills the holes, and chill in the refrigerator until set.
  9. In a separate bowl, beat the cold heavy cream and vanilla extract to soft peaks, then add powdered sugar and whip to stiff peaks.
  10. Spread the homemade whipped cream over the pudding layer, top with festive sprinkles, and serve chilled.

Notes

To achieve the cleanest slices, use a sharp knife and wipe it clean with a damp cloth between each cut. For the most vibrant results, use gel-based food coloring which provides deep hues without altering the consistency of the cake batter. This cake is best prepared a few hours in advance, giving the pudding ample time to soak into the sponge for maximum moisture.

The Pantry Basics

Keeping things easy means leaning on accessible ingredients you might already have. We are dressing up a humble box mix to make something truly special without the extra dishes.

  • White Cake Mix: Your favorite boxed brand works perfectly here. Just grab the eggs, water, and oil called for on the back of the box!
  • Instant Cheesecake Pudding: Two small boxes give the filling a rich, sweet tang that pairs wonderfully with the cake.
  • Milk & Heavy Cream: Cold milk helps the pudding set up, while heavy cream whips into a gorgeous, fluffy topping.
  • Food Coloring & Sprinkles: Red and blue food coloring turn the batter into a fun swirled masterpiece. Do not forget the festive sprinkles for the top!

The Simple Process

Step 1: Prep and Mix

Preheat your oven according to the cake box directions and grease a 9×13 baking dish. Whip up the cake batter exactly as the package instructs.

Step 2: Color the Batter

Divide the batter evenly into three separate bowls. Leave one bowl white, tint the second bowl red, and color the third bowl blue. Stir until the colors are bright and fully mixed.

Step 3: Swirl and Bake

Drop spoonfuls of each colored batter randomly into your prepared baking dish. Tap the pan on the counter to level it out, then use a toothpick to gently swirl the colors. Bake as directed, then let it cool slightly.

Step 4: Poke the Cake

After about 10 minutes, use the handle of a wooden spoon to poke holes all over the warm cake. Let the cake cool completely on your counter.

Step 5: Add the Pudding

Whisk the instant cheesecake pudding and milk in a medium bowl until dissolved. Pour the mixture evenly over the cooled cake, aiming for the holes, and spread the rest on top. Chill in the fridge until set.

Step 6: Whip and Top

Beat the cold heavy cream and vanilla extract until soft peaks form, then add powdered sugar and whip to stiff peaks. Spread this lovely whipped cream over the pudding layer, add sprinkles, and serve!

Meagan’s Easy Wins

When coloring the batter, use gel food coloring if you have it for the most vibrant hues without thinning the mix. If you do not have a wooden spoon to poke the cake, a wide straw or even a clean finger works in a pinch! You want the holes wide enough so the sweet pudding can sink right in. For more simple ideas that take minimal effort, check out our collection of Cute & Quick Bakes. Always let the cake cool fully before adding the whipped cream so it doesn’t melt.

Make It Yours

The best part about this dessert is how adaptable it is. Swap the cheesecake pudding for vanilla or white chocolate if that is what you have in the pantry. For another festive twist, I sometimes add a layer of fresh berries right on top of the whipped cream, just like they do over at Lil’ Luna.
