Description

Create a colorful and festive treat with this Patriotic Poke Cake, featuring a swirled red, white, and blue interior soaked in creamy cheesecake pudding. Topped with a cloud of fresh whipped cream and festive sprinkles, it is the ultimate easy dessert for summer holiday celebrations.

Ingredients

  • 1 box white cake mix (plus eggs, oil, and water required by package)
  • 2 boxes (3.4 oz each) instant cheesecake pudding mix
  • 4 cups cold milk
  • Red food coloring
  • Blue food coloring
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • Red, white, and blue sprinkles

Instructions

  1. Preheat your oven according to the cake box directions and grease a 9×13-inch baking dish.
  2. Prepare the white cake batter in a large bowl exactly as the package instructs.
  3. Divide the batter evenly into three separate bowls; leave one white, tint the second bowl red, and the third bowl blue, stirring until the colors are bright.
  4. Drop spoonfuls of each colored batter randomly into the prepared baking dish and use a toothpick to gently swirl the colors together.
  5. Bake as directed on the box, then remove and let the cake cool for approximately 10 minutes.
  6. Use the handle of a wooden spoon to poke holes across the entire surface of the warm cake, then allow the cake to cool completely.
  7. In a medium bowl, whisk together the instant cheesecake pudding and cold milk until dissolved.
  8. Pour the pudding mixture evenly over the cooled cake, ensuring it fills the holes, and chill in the refrigerator until set.
  9. In a separate bowl, beat the cold heavy cream and vanilla extract to soft peaks, then add powdered sugar and whip to stiff peaks.
  10. Spread the homemade whipped cream over the pudding layer, top with festive sprinkles, and serve chilled.

Notes

To achieve the cleanest slices, use a sharp knife and wipe it clean with a damp cloth between each cut. For the most vibrant results, use gel-based food coloring which provides deep hues without altering the consistency of the cake batter. This cake is best prepared a few hours in advance, giving the pudding ample time to soak into the sponge for maximum moisture.
